Due Forni Pizza & Wine makes brilliant pizza. No hyperbole intended. A pair of specially-designed Napoletano brick ovens sit side-by-side in the open kitchen, churning out a well-devised selection of two styles of pizza- Napoletana and Romana, sourcing regionally and globally from outstanding producers. The Napoletana crust is ideal for the pork ragu, Italian bufala mozzarella and Calabrian chiles making up the Maiale Bolognese. If you want a rich and decadent ‘Za, look no further than the Tartufo- black truffle and an over-easy egg round out that amazing creation.
But wait, there’s more. With a name like Due Forni, Italian for “two ovens”, expect every hot portion of the menu to be finished inside them. No flattop to grill, fryers to fry, or salamanders to broil. With the exception of the pasta (pot-boiled on a single gas burner in a tucked away corner of the kitchen), the due forni are doing all the cooking.
For starters, never pass up an opportunity to choose from the tasty Mozzarella Bar or order the polipo. The brined and braised Mediterranean octopus is painstakingly prepared and cooked over days and finished with a char in one of the ovens. Tossed in mint vinaigrette and garnished with piquillo peppers, the dish offers uncanny textures and flavors you’ll come back for on the regular. This writer certainly does.
